Your tasks

• Preparation of classic and modern sauces, stocks and jus
• Responsibility for the sauce station (organization, mise en place, quality)
• Coordination of flavors, textures and presentation at a high level
• Preparation of meat dishes and matching components
• Close cooperation with other stations for perfect timing processes
• Checking the use of goods, freshness and storage
• Creative co-development of new dishes and sauce variations
• Ensuring compliance with cleanliness and HACCP guidelines, as well as quality standards

As Executive Sous Chef at the Dachsteinkönig in Gosau, you are the chef's right-hand man and take responsibility for day-to-day operational kitchen management. With your modern management style, you will motivate the team, ensure the highest quality standards and bring creative, contemporary ideas to the culinary arts. In a young, dynamic environment, you will actively shape processes and ensure a top-level culinary experience.

Your tasks

• Operational management of kitchen processes in close coordination with the Executive Chef
• Responsibility for several items and ensuring smooth service
• Management, motivation and further development of the kitchen team
• Monitoring and compliance with quality, hygiene and HACCP standards
• Planning and organization of duty rosters as well as efficient staff deployment managementSecuring economical use of goods including purchasing,
• storage and inventory
• Sharing responsibility for menu design and creative development of the culinary offering
• Training new employees and continuously promoting talent
• Ensuring a consistently high level of quality in presentation and taste
