The Sous Chef supports the Head Chef in operational management and works with him to ensure stable processes and consistently high quality in day-to-day business. The Sous Chef makes a significant contribution to implementing the standards, managing the team on a day-to-day basis and ensuring that the service runs smoothly.
In the absence of the Head Chef, the Sous Chef takes over the operational management of the kitchen and ensures the reliable implementation of processes.
Your main tasks:
- Supporting the Head Chef in operational management
- Operational deputy for the Head Chef in day-to-day business in his absence
- Actively participate in day-to-day kitchen operations by taking on your own position
- Ensuring smooth processes during services and support with pass management
- Supporting the management, guidance and motivation of the kitchen team
- Support in the implementation and further development of the menus under the direction of the Head Chef
- Supporting the use of goods, purchasing, warehousing, inventories and the economic management of kitchen operations in your own area of responsibility
- Ensuring compliance with and active implementation of all quality, hygiene and safety standards (incl. HACCP)
- Working closely with the Head Chef, service and restaurant management to ensure optimal coordination of processes
- Act as a role model in daily work - professional, collegial and reliable
Our requirements for you:
Professional qualifications
- Completed training as a chef
- Several years of experience in upscale à la carte gastronomy, ideally as a sous chef or similar
- Sound knowledge of all items, modern cooking techniques, presentation standards
- Experience in operational organization, staff management and process control
- Knowledge of HACCP
Personal qualities
- Exemplary leadership personality with team spirit
- High quality standards, ability to work under pressure and hands-on mentality
- Structured, independent way of working
- Strong communication skills, flexibility and solution-oriented thinking
- Very good knowledge of German, English an advantage
